Chicha

Chicha Inti

Our clas­sic Chicha, inspired by Inca tra­di­tions. Malt­ed Col­orado blue corn and clove, 5.5% ABV, Gluten-Free. Dark in col­or, but sweet and light in taste, Chicha Inti pro­vides a well-bal­anced com­bi­na­tion of corn and spices. Avail­able in bot­tles and on draft, includ­ing growlers.
Nues­tra Chicha clási­ca, inspi­ra­da en las tradi­ciones incas. Maíz azul mal­tea­do de Col­orado y cla­vo, 5.5% ABV, Sin Gluten. De col­or oscuro, pero dulce y de sabor ligero, Chicha Inti pro­por­ciona una com­bi­nación equi­li­bra­da de maíz y espe­cias. Disponible en botel­las y en bor­rador, inclu­i­dos growlers.

Vanilla Túpac Amaru III Imperial Black Chicha

Our sea­son­al cel­e­bra­tion of the Sum­mer Sol­stice (in Peru), we decid­ed to take a vanil­la spin on our Black Impe­r­i­al Chicha. Made from roast­ed malt­ed blue corn, aged in Ris­ing Sun Dis­tillery Peach Brandy bar­rels, with Palo San­to wood staves and a full pound of vanil­la beans for each bar­rel. The cof­fee and camp­fire fla­vors of the roast­ed corn malts are mel­lowed by the sweet­ness of the vanil­la, the wood, and peach to cre­ate a smooth and rich brew with sub­tle notes of anise. 11% ABV, Gluten-Free. Avail­able on draft and in large for­mat bottles

Túpac Amaru Imperial Chicha (2022 Vintage)

Col­orado malt­ed blue corn and clove, 11% ABV, gluten-free. Our annu­al Spring release, cel­e­brat­ing the lega­cy of the last emper­or of Peru and his spir­i­tu­al suc­ces­sor who led the first Peru­vian Rev­o­lu­tion against the Span­ish. For 2022, we began the lat­est chap­ter in our Impe­r­i­al series, with this first release aged in our new Clay Ampho­ra aging tank. Still aged on Palo San­to wood staves as well, the beer came out beau­ti­ful­ly, with earthy and bog­gy fla­vors from the clay, spicy anise and cin­na­mon from the Palo San­to, and the rich­ness of the Chicha. Avail­able on draft and in 500ml bottles.

Pulque

Azteca Pulque

Agave, malt­ed yel­low corn, choco­late, Arbol Chile, and cin­na­mon. Our annu­al Dia de los Muer­tos release, this is a won­der­ful light­ly tart choco­latey delight. Like an alco­holic Mex­i­can hot choco­late, except that it’s cold. Avail­able on draft, includ­ing growlers.

Guava Tamarind Moctezuma Imperial Pulque

Maguey sap, malt­ed blue corn, gua­va, tamarind, and cin­na­mon, 10% ABV, Gluten-Free. Our Sep­tem­ber bar­rel aged release, aged in our clay ampho­ra. Deep fruit fla­vors com­ple­ment the tart fla­vors of the beer and rich tamarind for a delight­ful array of fla­vors. Avail­able on draft and in large for­mat bottles.

Moctezuma Imperial Pulque (2022 Vintage)

Maguey sap, malt­ed blue corn, and cin­na­mon, 10% ABV, Gluten-Free. Our fourth vin­tage of this impe­r­i­al pulque aged in our clay ampho­ra, the fla­vors are unique and bal­ance beau­ti­ful­ly. Named for the last two emper­ors of the Aztec Empire. Earthy, sweet and sour, this pulque is unlike any­thing else. Avail­able on draft and in large for­mat bottles.

Maguey sap, malt­ed blue corn, hibis­cus and cin­na­mon, 10% ABV, Gluten-Free. Our Sep­tem­ber bar­rel aged release, once again aged in Napa Val­ley Caber­net Bar­rels. An abun­dance of hibis­cus adds a fan­tas­tic flo­ral note to the com­plex bal­ance of sweet and sour. Avail­able in large for­mat bottles.

Maguey sap, malt­ed blue corn, and cin­na­mon, 10% ABV, Gluten-Free. Our third vin­tage of this impe­r­i­al pulque aged in Napa Val­ley Caber­net bar­rels, it is as good as bar­rel-aged sours get. Named for the last two emper­ors of the Aztec Empire). Nice bal­ance of sweet and sour, with a dry fin­ish and great com­plex­i­ty. Avail­able on draft and in large for­mat bottles.

Tepache

Pineapple Ginger Tepache

Malt­ed blue corn, pineap­ple, and gin­ger, 4.5% ABV, Gluten-Free. Our sum­mer sea­son­al ver­sion of the clas­sic Tepache, with the tang of pineap­ple bal­anced with by cool­ing sen­sa­tion of gin­ger. Prob­a­bly the light­est beer we’ve ever might, it is refresh­ing and per­fect for sum­mer. Avail­able in bot­tles and on draft, includ­ing growlers.

Pineapple Cinnamon Tepache

Malt­ed blue corn, pineap­ple, and cin­na­mon. Our ver­sion of the clas­sic Tepache, with the tang of pineap­ple bal­anced with by the cin­na­mon spice. Equal­ly great for both hot sum­mer days and cool win­ter nights. Avail­able in bottles

Chicha Morada

Peru­vian pur­ple corn, lime, clove, and cin­na­mon, Non-Alco­hol (Root beer). Bright pur­ple in col­or and sweet in fla­vor, this is a nice palette cleanser between tast­ings or goes great on its own. Avail­able in bot­tles and on draft, includ­ing growlers.
