Chicha

Chicha Inti

Our clas­sic Chicha, inspired by Inca tra­di­tions. Malt­ed Col­orado blue corn and clove, 5.5% ABV, Gluten-Free. Dark in col­or, but sweet and light in taste, Chicha Inti pro­vides a well-bal­anced com­bi­na­tion of corn and spices. Avail­able in bot­tles and on draft, includ­ing growlers.
Nues­tra Chicha clási­ca, inspi­ra­da en las tradi­ciones incas. Maíz azul mal­tea­do de Col­orado y cla­vo, 5.5% ABV, Sin Gluten. De col­or oscuro, pero dulce y de sabor ligero, Chicha Inti pro­por­ciona una com­bi­nación equi­li­bra­da de maíz y espe­cias. Disponible en botel­las y en bor­rador, inclu­i­dos growlers.

Kimera Sour Koji Rice Chicha (Collaboration with Jade Mountain Brewery)

We teamed up with Jade Moun­tain to brew this amaz­ing amal­ga­ma­tion of East & West. Jade Mountain’s exper­tise in brew­ing with rice gave us the chance to make a brew inspired by Venezue­lan Chicha, a rice and milk drink sim­i­lar to a hor­cha­ta. This col­lab is a won­der­ful com­bi­na­tion of both of our brew­eries and cul­tures. Brewed with 100% gluti­nous rice, Jade Moun­tains house Chi­nese koji strain and then blend­ed with a huge amount of cin­na­mon, vanil­la, toast­ed coconut & lac­tose. ALLERGEN WARNING: Con­tains lac­tose. While brewed with 100% gluten-free ingre­di­ents, this beer was brewed at Jade Moun­tain (not a gluten-free facil­i­ty) so we can­not guar­an­tee that is 100% gluten-free as we can with beers brewed at Dos Luces. Large pours served with whipped cream top­ping. Avail­able on draft only, no growlers.

Túpac Amaru III Imperial Chicha (2021 Vintage)

Our sea­son­al cel­e­bra­tion of the Spring Equinox includes the annu­al release Tùpac Amaru III, our flag­ship bar­rel-aged “Impe­r­i­al” Chicha. Named for the last emper­or of the Inca (and his ances­tor, who led an ear­ly rev­o­lu­tion against the Span­ish), it rep­re­sents a cel­e­bra­tion of the pos­si­bil­i­ties of corn, just as Spring is a cel­e­bra­tion of the pos­si­bil­i­ties of Sum­mer. This year’s vin­tage is a BLACK impe­r­i­al chichi, made from roast­ed malt­ed blue corn, aged in Ris­ing Sun Dis­tillery Peach Brandy bar­rels, with Palo San­to wood staves. The cof­fee and camp­fire fla­vors of the roast­ed corn malts are mel­lowed by the wood and peach to cre­ate a smooth and rich brew with sub­tle notes of anise and vanil­la. 11% ABV, Gluten-Free. Avail­able on draft and in large for­mat bottles.

Peach Túpac Amaru III Imperial Chicha

Our sea­son­al cel­e­bra­tion of Inti Ray­mi (Win­ter Sol­stice in Peru) this year includ­ed the release of Peach Tùpac Amaru III, a vari­a­tion on our bar­rel-aged “Impe­r­i­al” Chicha.  Aged in Ris­ing Sun Dis­tillery Peach Brandy bar­rels, with Palo San­to wood staves, it has a mel­low sweet­ness con­trast­ed by the sharp fla­vors of the wood. Made from malt­ed blue corn, peach, and clove, 11% ABV, Gluten-Free.  Avail­able on draft and in large for­mat bottles.

Pomegranate Túpac Amaru III Imperial Chicha

Our sea­son­al cel­e­bra­tion of the Sum­mer Sol­stice (in Peru) includes the release of Pome­gran­ate Tùpac Amaru III, a vari­a­tion on our bar­rel-aged “Impe­r­i­al” Chicha.  Aged in Colom­bian Rum bar­rels, with Palo San­to wood staves, the fla­vors are rich and just a touch boozy. Made from malt­ed blue corn, pome­gran­ate juice, and clove.

Pulque

Pulque Metztli

Our clas­sic Pulque, inspired by Aztec tra­di­tions. Maguey sap (AKA Aguamiel, the same ingre­di­ent that makes Mez­cal), malt­ed blue corn, and cin­na­mon, 7% ABV, Gluten-Free. A “back­wards sour beer,” Pulque has all of the fla­vor ele­ments of a sour, with all the com­plex­i­ty that comes with, but it fin­ish­es sweet (ver­sus bar­ley beers that tend to fin­ish sour). Avail­able in bot­tles and on draft, includ­ing growlers.
Nue­stro Pulque clási­co, inspi­ra­do en las tradi­ciones aztecas. Savia de maguey (Aguamiel, el mis­mo ingre­di­ente que hace el Mez­cal), maíz azul mal­tea­do y canela, 7% ABV, Sin Gluten. Una “cerveza amar­ga al revés”, Pulque tiene todos los ele­men­tos de sabor de una amar­ga, con toda la com­ple­ji­dad que la acom­paña, pero ter­mi­na dulce (en com­para­ción con las cervezas de ceba­da que tien­den a ter­mi­nar amar­gas). Disponible en botel­las y en bor­rador, inclu­i­dos growlers.

Moctezuma III (2021 Vintage)

Maguey sap, malt­ed blue corn, and cin­na­mon, 10% ABV, Gluten-Free. Our third vin­tage of this impe­r­i­al pulque aged in Napa Val­ley Caber­net bar­rels, it is as good as bar­rel-aged sours get. Named for the last two emper­ors of the Aztec Empire). Nice bal­ance of sweet and sour, with a dry fin­ish and great com­plex­i­ty. Avail­able on draft and in large for­mat bottles.

Tepache

Pineapple Ginger Tepache

Malt­ed blue corn, pineap­ple, and cin­na­mon, 4.5% ABV, Gluten-Free. Our sum­mer sea­son­al ver­sion of the clas­sic Tepache, with the tang of pineap­ple bal­anced with by cool­ing sen­sa­tion of gin­ger. Prob­a­bly the light­est beer we’ve ever might, it is refresh­ing and per­fect for sum­mer. Avail­able in bot­tles and on draft, includ­ing growlers.

Agua Fresca Dura

Muluc Agua Fresca Dura de Limón

Named for the Mayan offer­ing of water to the gods, this “Hard Aqua Fres­ca” is a light, refresh­ing drink with sim­ple fla­vors of pur­ple corn and lime. Avail­able in bot­tles and on draft, includ­ing growlers.

Chicha Morada

Peru­vian pur­ple corn, lime, clove, and cin­na­mon, Non-Alco­hol (Root beer). Bright pur­ple in col­or and sweet in fla­vor, this is a nice palette cleanser between tast­ings or goes great on its own. Avail­able in bot­tles and on draft, includ­ing growlers.
