Chicha Inti

Our clas­sic Chicha, inspired by Inca tra­di­tions. Malt­ed Col­orado blue corn and clove, 5.5% ABV, Gluten-Free. Dark in col­or, but sweet and light in taste, Chicha Inti pro­vides a well-bal­anced com­bi­na­tion of corn and spices. Avail­able in bot­tles and on draft, includ­ing growlers.
Nues­tra Chicha clási­ca, inspi­ra­da en las tradi­ciones incas. Maíz azul mal­tea­do de Col­orado y cla­vo, 5.5% ABV, Sin Gluten. De col­or oscuro, pero dulce y de sabor ligero, Chicha Inti pro­por­ciona una com­bi­nación equi­li­bra­da de maíz y espe­cias. Disponible en botel­las y en bor­rador, inclu­i­dos growlers.

Black is Beautiful Black Chicha

What we believe to be the world’s first Black Chicha, this beer was brewed as part of the “Black is Beau­ti­ful Beer” project to sup­port social jus­tice caus­es through­out the nation. Our ver­sion is made from malt­ed blue corn, roast­ed malt­ed blue corn, and clove. Think of it a Porter Chicha, with the rich dark roast­ed fla­vors and aro­mas rem­i­nis­cent of cof­fee and camp­fire. The per­fect sip­per for dark and cool nights. A por­tion of the rev­enue from this beer will ben­e­fit local char­i­ties that sup­port social jus­tice. Avail­able on draft, includ­ing growlers.

Túpac Amaru III Imperial Chicha

Aged in Colom­bian rum bar­rels with palo san­to wood staves, this sim­ple-seem­ing beer is decep­tive­ly com­plex. Corn sweet­ness mix­es with rum boozi­ness and mel­low fla­vors of white pep­per and licorice from the wood to cre­ate a beer unlike any oth­er. Made sim­ply from malt­ed blue corn and clove. Avail­able on draft and in large for­mat bottles.

Mango Arbol Chile Túpac Amaru III Imperial Chicha

A sea­son­al vari­a­tion of our Colom­bian bar­rel-aged Chicha, we brew with chiles and add man­go dur­ing fer­men­ta­tion to give this beer a greater depth and com­plex­i­ty. Made from malt­ed blue corn, man­go, arbol chile, and clove. Avail­able on draft and in large for­mat bottles.

Pulque

Pulque Metztli

Our clas­sic Pulque, inspired by Aztec tra­di­tions. Maguey sap (AKA Aguamiel, the same ingre­di­ent that makes Mez­cal), malt­ed blue corn, and cin­na­mon, 7% ABV, Gluten-Free. A “back­wards sour beer,” Pulque has all of the fla­vor ele­ments of a sour, with all the com­plex­i­ty that comes with, but it fin­ish­es sweet (ver­sus bar­ley beers that tend to fin­ish sour). Avail­able in bot­tles and on draft, includ­ing growlers.

Azteca Pulque

Maguey sap, malt­ed blue corn, cacao nibs, cacao shells, choco­late, cayenne, and cin­na­mon. Our annu­al Dia de los Muer­tos release, this is a won­der­ful light­ly tart choco­latey delight. Like an alco­holic Mex­i­can hot choco­late, except that it’s cold. Avail­able on draft, includ­ing growlers.

Blackberry Pulque

Maguey sap, malt­ed blue corn, black­ber­ry, and cin­na­mon. This one came out funky and we like it. The nut­ty fla­vor of blue corn blends with the funk­i­ness of the maguey, which is then bal­anced nice­ly by an abun­dance of black­ber­ries. The mix of fla­vors works togeth­er to make a nice, well bal­anced sour. Avail­able on draft, includ­ing growlers.

Moctezuma III Imperial Pulque

Maguey sap, malt­ed blue corn, and cin­na­mon. Our sec­ond vin­tage of this impe­r­i­al pulque aged in Reposa­da Tequi­la bar­rels, it is as good as bar­rel-aged sours get. Nice bal­ance of sweet and sour, with a dry fin­ish and great com­plex­i­ty. Avail­able on draft and in large for­mat bottles.

Strawberry Moctezuma III Imperial Pulque

Maguey sap, malt­ed blue corn, straw­ber­ry, and cin­na­mon. Our 2020 fruit­ed impe­r­i­al pulque, fer­ment­ed with straw­ber­ries to cre­ate a mel­low, yet intense, fruit­ed sour that is rem­i­nis­cent of the best Cura­dos of Mex­i­co city. Avail­able on draft and in large for­mat bottles.

Pineapple Tepache

Malt­ed blue corn, pineap­ple, and cin­na­mon. Our ver­sion of the clas­sic Tepache, with the tang of pineap­ple bal­anced with by the cin­na­mon spice. Equal­ly great for both hot sum­mer days and cool win­ter nights. Avail­able in bot­tles and on draft, includ­ing growlers.
